Dried shiitakes are highly prized in Japanese cuisine, and these are some of the best. Grown in winter in the forests of Kyushu, these mushrooms are dried slowly over 20 hours at a low temperature. The white cracking on top of the dried mushroom is called the flower and is a sign that the mushroom was grown in a good environment. 

Use to make shiitake dashi or add umami to your stocks and broths. Also delicious rehydrated and cooked!
