Located in the fishing village of Ine on the edge of the Sea of Japan, Mukai Shuzo is helmed by Kuniko Mukai. Her family has owned this brewery for nearly 270 years and Kuniko-san is one of a small but growing number of female sake brewers in Japan. She is particularly creative in her approach, running with ideas for unique sakes that buck convention.
