This usukuchi, or “light colored” soy sauce, is at once sweeter, saltier, funkier, and more savory than dark soy. Brewed with extra wheat and koji, it is an ideal finishing soy for sushi.

Use this sauce to dress or dip your sushi in, give homemade salad dressing a big umami punch, or dash some over a piece of cold tofu with scallions, grated ginger, and katsuobushi for a terrific hiyayakko.

About the Producer


Located near the Ibogawa river that flows through Hyogo Prefecture and on into the Seto Inland Sea, Suehiro Shoyu has been brewing usukuchi (light colored) soy sauce using traditional methods since 1879. This area is the birthplace of usukuchi soy sauce, where it has been brewed since the 1600s.
